10 Reasons why I love him!

He surprises me with flowers.... I get flowers often and for no reason!

He is the perfect father. I couldn't ask for a better father for our son. He goes above and beyond. He adores Kolt and Kolt adores him. The love, adoration, and tenderness in his eyes when he looks at Kolton makes my day!

He supports me in anything and everything that I do. He encourages me to be a better me.

He gives me "Me" time. After he works ALL day long he comes home and tells me to "get out of the house for a little bit".

He believes the best about people. He never jumps to conclusions, he gives people a second (third, fourth, fifth) chance, he forgives quickly, he actively refrains from "reading into" other people's motives and encourages me to do the same.

He is a hard worker, not only at his job but in our home. The areas that I struggle to keep up he pulls up the slack with out saying a word and never complains.

When I am sick he takes care of me. He tells me to lay in bed and watch tv! He brings me soup, sprite and medicine, shuts the door, takes care of Kolton and lets me rest!

He is committed to me being a Stay at Home Mom. I would hate if he insisted on me working and missing out on all of the precious moments. Instead, he understands the importance for both Kolt and I and works incredibly hard to make it possible.

He carries pictures of Kolton and notes that I write him in his truck.

He loves me unconditionally!

And... I have to brag. Look at what he surprised me with yesterday! He said, "You deserve to have the best on your wedding day!" I can't wait to marry this man!!

Kolton has been very busy getting ready for his Mommy and Daddy's wedding in Jamaica! He has spent his days soaking in the sun, working on his sand castle building skills and practicing on the steel drums!

Kolt's all packed...

and ready for Jamaica!! The second I pulled out his suitcase I knew he was going to get in it... so I ran and got my camara!! He is such a ham and I love it!!

Today I started packing and I am HOPING to be done tomorrow! Wish me luck!! (I will be needing it!)

What's for dinner!?

I have never been much of a cook until about 2 years ago. When I was pregnant with Kolton I was hungry, bored, looking for a hobby, etc and started cooking a little bit... I have really grown to love it. When I started I would follow a recipe exactly... now I like to mix it up a little bit. I don't measure and I add what I feel like adding! I am constantly looking for new and fun recipes so if you have any, please send them to me!!!

Here's what we had for dinner last night:

Green Chili Chicken Enchiladas

Ingredients:
Tortillas ( I used flour tortillas bc Brandon is picky!! You can use corn tortillas too!) I like to make my own tortillas. I think it taste better and it's much cheaper!!


3-4 boneless skinless chicken breast
shredded cheese
1 can chopped green chilies
1 small onion chopped
1 can of green chili enchilada sauce
1/4 cup Rotel
Salt to taste
Pepper to taste
Garlic chopped

Pre-heat oven to 350

Boil chk until it is all the way cooked. I added garlic, salt and pepper to the water for flavor. Let it cool and chop it.

In a bowl, mix enchilada sauce, chicken, chopped green chilies, chopped onion, rotel, garlic, salt and pepper.

Pour a thin layer of enchilada sauce on the bottom of the baking pan.

Fill each tortilla with the green chili chicken mixture and and cheese. Roll it and placed in baking pan, seam side down.

Pour remaining enchilada sauce over enchiladas and cover with cheese.


Cover and bake until cheese is bubbly. (About 30 minutes)

It's really yummy served with lettuce, sour cream and guacamole!

Monkey Leash!!???

So... I realized last night that we leave for Jamaica in 12 days! In my head I kept thinking that I had longer to get all the odds and ends taken care of! Nope... only 12 days and not even 12 full days! I know we can do it, I don't care what we pack... I just want to marry my best friend!!

As soon as Kolt woke up from his morning nap and had a little lunch we rushed out the door with a large to-do list.

We made a few stops all over town, Toys R' Us, Dusty's, 10-20 boutique and Old Navy. Old Navy has all Summer clothes 50% off and I got Kolt great swim trunks for only $4.00!

When we got to the mall I rented Kolt a Police Car stroller because he likes to pretend he is driving! (and when he is a happy boy, shopping is easier for me!) I wish I would have taken a picture, he was such a ham! Kolton has now learned how to stand up in the car stroller. If I turned my back for a second he would be standing up, turned around and drinking my Dr. Pepper. This happened several times and everyone shopping thought it was the funniest thing! I thought it was scary!

I tried to let him down to see if he would walk next to me or at least stay in the same vicinity. Yeah Right!! He takes off into the clothing racks and disappears!! I use to make fun of the parent's that put there kids on leashes.... but I am heading to Wal-mart tonight to buy him a leash for Jamaica! (maybe two, just in case we lose the 1st one!)If you don't know what I am talking about, here is a pic. (The monkey one is kind of cute... right!???)



The dressing room is always an adventure with him. All I wanted to do was try on one swim suite and he managed to climb under the door into other women's rooms and open the door to my room a few times!! So... I bought the suite with out really trying it on! (I hope it fits!)

We shopped and shopped and shopped and ended the day getting a balloon sword, eating Chick fil A and playing in the Kiddie play ground. We made it home in time for Kolt to lay down for a nap and for me to watch Dr. Phil! Awww, good day! I did not get everything done on the to-do list, but still a good day with my little monkey!

Sunday car wash

Kolton, Brandon and I spent Sunday washing the cars, playing in the water and hanging out in the sun... It's the simple things in life that are the best and mean the most!!!











Kolt decided that he needed to wash his cars!!









He was a great help...he got a Sherbert Push Pop!
