Just a few days old...

Remember this sweet maternity shoot?

Well... they had a beautiful little baby girl one week later.

My favorite part of the shoot was watching little Dani watch her Mom and Dad. She could NOT take her eyes off of them. So sweet!

Here are a few from our mini-session. I wish I could post more but I have a very wild toddler that has just woke up from nap!!

This is how I feel right now...

I have strep throat!!
Chills, sore neck, swollen glands, cough, head ache, exhausted... blah, blah, blah!!

I went to the Dr. today and got lots of good meds and 2 shots! I know I will be better soon... hopefully tomorrow. I have to much stuff to do and no time to be sick!

Red velvet cupcake with cream cheese frosting

These are the best cupcakes ever!! Beware... they are addicting. I have already had 2 today!

Cake
2 1/2 cups of flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons unsweetened cocoa powder
Red food coloring (I just kept pouring it in until I was happy with the color!)
1/2 cup unsalted butter, softened
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda

Frosting
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar

Preheat oven to 350 degrees. Line two 12-cup muffin tins or silicone pans with cupcake liners.

Sift together the cake flour, baking powder, and salt into a medium bowl and set aside. In a smaller bowl, mix food coloring and cocoa powder to form a thin paste without lumps and set aside.

In a large bowl, using a hand mixer beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa paste, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.

In a small bowl, mix vinegar and baking soda. Be careful as it will fizz so don't do it in a shallow bowl. Add vinegar mixture to the cake batter and stir well to combine. Fill cupcake cups with cake batter until they are a little under 3/4 full. I ended up with 20 cupcakes. Place muffin tins in your preheated oven. Bake for approximately 20, rotating pans halfway through. The cupcakes are done when you are able to insert a toothpick into the center of a cupcake in the center of the tin and if it comes out clean they are done!

Cool the cupcakes in their tins for about 10 minutes then remove and allow to cool completely before frosting.

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Enjoy!

We love Disney!

Brandon surprised Kolt and I with tickets to Disney Live! We had the best time ever! Here are a few pictures from our evening.

He even searched the town for a Mickey shirt. This is the ONLY Mickey shirt this town has! No joke...

We ate lots and lots of popcorn!

We danced and sang! When I say dance... I mean dance! Kolt danced for 2 hours straight!! I wish I had better pictures to show you... Kolt had some great moves!!

Check out this awesome show! They did an amazing job!

It's finally the weekend! I hope everyone has a great one!

Hungry?

Last night I made a pot of beans to go with our dinner. They turned out great... here's the recipe. (Sorry... I am not good at measuring!!!)

dry pinto beans (I used about 2c) *I made a small serving for dinner... you can add more easily!*
about half an onion chopped
3 jalapenos seeded and chopped
4 slices of bacon
salt
pepper
garlic salt
garlic powder
cajun seasoning
Louisiana hot sauce

Rinse beans and soak all night.

Put in crock pot with all the above ingredients and cover with water. (I seasoned a lot!!)

Cook about 8 hours on low or until tender.

*You will have to keep adding water through out the day.*
